Fostering local culinary talent and demonstrating the success of

“School-Corporation Partnership”

Macao, May 14, 2025 – Wynn is dedicated to fostering the growth of local youth by continuously providing comprehensive and professional platforms for learning and unleashing their potential. Under the initiative of the Education and Youth Development Bureau, Wynn has partnered with Escola Luso-Chinesa Técnico-Profissional (ELCTP) since 2021 to implement the “School-Corporation Partnership” initiative and launch the Wynn Culinary Internship Program. This program aims to cultivate culinary talent in Macao and offer diverse career options for local youth. The program has successfully trained nearly 40 culinary arts students from ELCTP to date since its inception, continually expanding the talent pool for the development of Macao’s catering industry. Recently, the 4th Wynn Culinary Internship Program graduation ceremony was successfully held at Wynn Palace, where trainees who had completed the year-long internship were awarded certificates of completion in the presence of their parents and many honorable guests, marking their entry into the culinary industry with professional competence.

During the graduation ceremony, Mr. Tam Kwok Fung, Executive Chef of Cantonese restaurant Chef Tam’s Seasons at Wynn Palace, shared the story of his career with the trainees. Entering the catering industry at the age of 17, Chef Tam has been dedicated to perfecting his cooking techniques in Cantonese cuisine and accumulated extensive experience from working in different places, and he is very honored to have received numerous accolades over the past four decades thanks to industry support and recognition. He observed a shift in how customers perceive chefs — from merely preparing the dishes customers choose from a menu to being entrusted with full discretion over the ingredients and menus. There is now a greater emphasis placed on the chefs’ professionalism. He therefore encouraged chefs to keep learning to pursue self-improvement and reach new heights.

Oscar Tam, a commis chef who has joined Gourmet Pavilion at Wynn Palace through the Wynn Culinary Internship Program, also shared his personal experience and said the program has raised his professional competence and confidence. With the valuable experience gained while working with different culinary teams in a number of positions, he can now handle the new work environment and challenges with greater ease.

The Wynn Culinary Internship Program, jointly initiated by Wynn and ELCTP and supported by the Macao University of Tourism, targets secondary school graduates who are interested in joining the catering industry and is currently the only food and beverage training program in Macao launched by an integrated tourism and leisure enterprise under the “School-Corporation Partnership.” Under the guidance of veteran instructors, trainees of the program attended courses covering culinary theories, culinary techniques, and industry knowledge, and received all-round practical skill training at the four kitchens of star-rated Wynn restaurants, laying a solid foundation for their future education and career and giving them an opportunity to be directly employed as a full-time member of Wynn’s culinary team after graduation.

The graduation ceremony was attended by: Mr. Leong I On, Director of Division of Secondary School of the Education and Youth Development Bureau; Zuleika Mok, Senior Vice President of Human Resources of Wynn Macau, Limited; Mr. Thomas Lau, Vice President of Human Resources of Wynn Palace; Ms. Stephanie So, Vice President of Human Resources of Wynn Macau; Mr. Barry Ip, Vice President of Learning and Advancement of Wynn Macau and Wynn Palace; Mr. Raymond Lei, Assistant Vice President of Community and Government Relations of Wynn Macau and Wynn Palace; Mr. Jean-Marc Dizerens, Senior Vice President of Food & Beverage of Wynn Macau and Wynn Palace; Mr. Franck Damianovitch, Executive Director of Culinary Operations of Wynn Macau and Wynn Palace; Principal Mr. Chan Seng Chao and Vice Principal Mr. Pun Vai Nim of ELCTP; and Ms. Lam Ching Chi, Dean of The Institute of Executive and Professional Development of the Macau University of Tourism, among others.
